Vinification | Slow and gentle direct pressing, cold settling and fermentation at controlled temperature to preserve the aromatic potential of the wine. The wine is then bottled with the liqueur de tirage for its second fermentation to become a sparkling wine. The bottles will age on slats for 18 months before disgorging, dosage and corking. |
