Vinification | Slow and gentle direct pressing, cold settling and fermentation with controlled temperature in order to preserve the aromatic potential of the wine. The wine is then bottled with the tirage liqueur for its second fermentation in order to become a sparkling wine. The bottles will age on laths for 18 months before disgorgement, dosing and corking. |
